Goodbye LSU baseball... : (

After two rain delays and 28 hours, LSU lost to UNC. But it is ok... LSU was not expected to do very well this year with only three seniors on the team and only one being a position player. They went farther than anyone expected and I am very proud of them! They claimed the SEC championship and won the Baton Rouge regional and super- regional. And they won their first CWS game in several years. They put up a tough fight tonight! LSU doesn't have the best pitching but our pitchers did an amazing job! LSU was down by two as we started tonight after the rain delay over night. Jared Bradford relieved Blake Martin and did an amazing job! After the second rain delay, the TIGERS came back in full swing and the Nation's leading homerun hitter, Matt Clark, smoked one to tie the game! That gave LSU fans all of the confidence to win the game. Apparently, confidence does not win games though. In the eighth inning, LSU has two runners on at second and third and Matt Clark came up to bat. By this time, UNC was on their fourth or fifth or sixth (I lost count) pitcher, who also just happen to be the number one pitcher in the ACC. He decided to walk Matt Clark.. the bases were then loaded with only one out. It felt like Tuesday all over again! The next batter was freshman, D. J. LaMahiew. The poor boy cannot hit for anything (but he can field a ball amazingly well!!) and he popped one up to the second baseman. Then the next batter also hit an infield fly. Not scoring with the bases loaded was a little depressing but the score was still tied and LSU still had one more time to bat... we just had to do what we had done the whole game and strike the first three batters out... well needless to say that did not happen. We allowed two batters to get on base and then after an error they advanced to second and third. Their number one batter came to bat and our oh so wonderful coaching staff and pitcher decided to walk him and load the bases. I knew as soon as they did this, the game was going to be over... I just had a really bad feeling. And that feeling was right. The next batter was pitched the perfect pitch and knocked it out of the park. This was the first grand slam in a CWS game since 2001. It was a very sad moment... LSU got the last out and then went in to bat. In what seemed like 10 seconds, UNC got three outs and the game was called. So now I must say goodbye to LSU baseball. Next year we will go the whole way and I will be there!!! - i hope anyways! it will be my senior year so if they make i will be trying my best to get there!!

A little bit of everything, that somehow all relates to LSU - go figure!

Everyone should check out this link. It is about a thirty second clip of Jim Hawthorne broadcasting when Blake Dean hit the ball that won us the game.... I think this was my exact reaction!

So I bit all of my fingernails off during yesterday's game. I had been doing so well. I broke down and bought some of the finger nail polish that has the bad taste, so maybe during the next nail bitter game, I will veer away from literally biting my nails!

I decided last night to look at the Tiger Mania website.. and well, I probably should have not done that. It is probably a good thing I am a broke college student, otherwise I would have spent a lot of money!!!

I am still overly excited today about yesterday's win!! North Carolina lost to Fresno State last night so we play North Carolina again tomorrow night. We lost to them Sunday 8-4. Hopefully, there will a different ending! This will also be an elimination game so there will be little chance of me not having heart failure again. The game is at 6pm on Thursday and I am not doing so well at patiently waiting for the game! The saying that has appeared to become LSU's motto during the last month or so is " Refuse to Lose!" I am a firm supporter of that statement and will be using it until we claim the NAtional Championship and win the College World Series.

So, GEAUX TIGERS GEAUX, Refuse to Lose!!!!!

LSU Baseball = : )

Today's game gave me heart failure. All LSU sports seem to do that to me. I decided to go to class for a little while and leave early to watch the last half of the game! I am glad I did! By the time I was able to get home, LSU was down by four. You could barely hear the LSU fans in the stands. It seemed to be a little depressing. My mom was already sending me text saying it was over. But, I am the type of person who has faith until the game is over.. even if we are loosing by 30. With that said, of course I believed we could and would still win! LSU is known as the fourth quarter team in football and has appeared to be an eighth inning team in baseball, so I anxiously waited on the eighth inning so we would rally and make this grand come back!! When the eighth inning finally came around we were down by four. Winning was definitely an option! All we needed was a grand slam to tie the game, and I have seen these boys pull that off more than once so I was not worried at all. Then the eighth inning was over and we had not scored. I will admit, I had lost a little hope since we usually rally during the eighth and that did not happen, but I knew we were the home team so we had one more shot. The TIGERS took the field and quickly got three outs! Then we batted and got several base hits, scored a run, then loaded the bases. I knew at that point if we had any shot at winning the game it would happen right now. And it did! The beast, Blake Dean, came to back and knocked the crap out of the ball and three runs scored and the game was called! We WON! It was soooo exciting!! I yelled a lot and now have a sore throat! Then I realized.... we either have to play North Carolina again or a team that beat North Carolina. I am afraid my heart failure is just beginning! At least Thursday's game will be at 6 pm so I will not have to miss class again! I am sure if anyone has decided to read this, they are probably thinking I am crazy, but oh well! I love me some LSU sports!

I survived two weeks with the kids, but my fingernails did not. It was sad... I realized Sunday that I had managed to bite them all off.. I am trying again this week. When they get a little longer I am going to get fake ones put on so they will grow underneath and I will not be able to bite them off. Well that is the plan anyways.

This weekend was EXTREMELY busy! Friday was Relay for Life. I left around 3, which was probably not a good idea. Saturday was Brooke's shower and then Sunday was Father's Day. At least I got my monies worth of gas with all of that going on.

LSU made it to Omaha! but, they lost their first game last night. It was sad. Luckily, it's double elimination so we play again tomorrow at 1! I have class at that time, so I will be skipping it! I cannot miss a College World Series game to sit in class and do nothing... so all you LSU fans, wear your purple and gold tomorrow to support the baseball boys!

Well that is all.... GEAUX TIGERS!!!

Mondays come so fast...

So never ever ever go to the Tupelo zoo. It was ridiculous. They had like ten animals and it cost us an arm and a leg to get it. Windell still enjoyed because he got to feed the giraffes and goats (which cost extra) and he got to ride a pony (also cost extra) and he had his picture taken with a baby alligator (and you guessed it, cost extra). So after that emptied the bank account, we went to the car museum. I am not all that into cars so it was not something I just loved, but it was a lot cooler than the zoo. Here are some pictures.

I made it through one week with the kids.. They haven't completely driven me crazy yet.

Dinner plans for the week:
Monday: Cheese soufflé and salad
Tuesday: Gumbo
Wednesday: breakfast
Thursday :leftover gumbo
Friday: Relay for life in Natchez
Saturday... ? will be in Natchez
Sunday.. probably have to cook for my dad.

It has been officially 11 days of no biting my fingernails! they are getting long!

....

Mom was released from the hospital today. She is now at Traci and Steve's recovering for the next two weeks until all of her post op check ups are finished.

I am kind of excited about going to the zoo tomorrow! I cannot even remember the last time I went to the zoo!

So this is big news for me... I have gone one week of not biting my finger nails! I am pretty excited about this. I have never made longer than 2 days. They are currently longer than they have ever been! I am determined to keep letting them grow so I can have pretty nails!

Alfredo Sauce

I tend to change the recipe each time I make it, but the general idea stays the same. So, here goes...

Ingredients
1-2 Tbs of Butter of Margerine
1 Tbs of minced garlic
1 1/2 - 2 C of a mix of any of the following : heavy cream/whipping cream/ half n half/ whole milk. (I never measure so this may be a little off. I usually use whatever I have in the fridge)
1 c of cheese. you can use whatever kind you want. at first i only used Parmesan, but now i use whatever i have. I really like using a Parmesan mix and a little mozzarella. but the choice is yours.
salt and pepper to taste

In a sauce pan, melt a tablespoon or two of butter or olive oil. After that is melted and hot add a tablespoon of garlic. Fresh minced garlic is always better but pre-minced will work just fine. The heat does not need to be on high because you will burn the garlic and that taste real bad! I usually have it a notch or two above medium. After the garlic has softened a little add the milk/cream or whatever you choose. after that comes to a boil or is pretty hot add cheese and whisk it in. After a few minutes, it will become sauce like. If it is too thick you can add a little more cream. If is too thin you can add a little more cheese and then make what I call a slur(i stole that word from food network). That is mixing a little flour with a little hot water in a bowl .. it needs to look similar to milk. Add a little of that until it is to the right thickness. The slur will thicken the sauce almost immediately and it does not require a lot. If you add too much you can add more cream to thin it out. Then add salt and pepper and serve over hot pasta or whatever you like!
Sorry, this is probably the most thrown together recipe ever. I have never measured anything or gone by a recipe to make it....

Update on mom... She is doing good today. She came out of surgery around 6 yesterday evening. She has been up and down several times today. We just talked to her a little while ago and she says she will be up and out of there in no time (ha ha- we will see).

So I did not think it was possible, but I burned chicken stock today.... twice. I was making homemade chicken noodle soup and the stock kept burning. I am blaming it on my pot. I cannot remember one single time I have used it without something burning in it. After my two failed attempts at soup, we had cheese ravioli with alfredo sauce and spinach salad and garlic bread. It was an easy last minute meal!

Classes might be a little harder than I thought they were going to be. My world civ class has lectures online that I have to listen to and take test on. The whole point of online school is to get out of the lectures... I have 5- 6 hours of lecture to listen to a week. :( Then American Lit will be the death of me this summer. We have a million things to read each week. I like literature but not 175 pages a week worth. My British lit class is super easy!! We do not have really anything to do in that class. I wish that was my American lit class. I would much rather read the passages from the British lit book than the American lit one. oh well, at least I have one break! Psychology of the Exceptional Child is interesting. My teacher had a stroke and has a speech impediment, so it is kind of difficult to understand him. He is so nice though!

Saturday I am bringing Windell and Rachael to the Tupelo zoo and buffalo park then we are going to the Antique Car Museum. It will be a fun and LONG day!

Well I hope everyone has a great rest of the week!

Prayer Request

If anyone happens to read this today. Mom is going into surgery around 11:30. It's going to be a fairly long surgery. I think 5 or 6 hours. She will then have to stay at the hospital for a week and half to two weeks to recover. Since she is having her surgery in Atlanta, it's a little too far to drive home for a few days then go back to Atlanta for her post- op check up so she will be staying with the Brocks for another week.

p.s... I made an A in geology!!!

No more Geology... EVER!

I finished Geology this morning!!!!!!!!!!!!! Boy am I glad I took that during maymester! There is no way I could have sat in that class for a whole semester! I should know my grade soon! Today was also the start of my three online classes! English Lit appears to be easy and the other two do not look too terrible hard, but they are not going to be "give me" classes. I start the Psych class tomorrow. I already know how that one will be and I am not looking forward to that!

I drove to Meridian yesterday and picked up Rachael and Windell. So far, so good. Except for the fact that Windell woke up sometime before 6 this morning. Today that was not that big of a problem because I just got up and studied, but if he continues to do that I am going to be one sleepy girl! I also brought them to Walmart today so I could go grocery shopping! That was not as bad of an experience as I thought it would be.

I am copying Claire's blog by posting dinner plans for the week. I think it will help me stay on schedule.

Monday: Pizza Kit.. Not sure what exactly is in the kit though
Tuesday: Grilled Chicken with Cous Cous and salad
Wednesday: Homemade Chicken Noodle soup and Grilled cheese
Thursday: Hamburgers and potato casserole or Hot Dogs and mac n cheese
Friday: Mexican Night...
Saturday: Hamburger Helper, if we are home... Mcdonalds if we go to Tupelo.
Sunday: (lunch) Pork Loin with yellow rice and salad and breadsticks
(Dinner) leftovers or sandwiches

We will see how well I stick to that.

Well Mom will be in Atlanta for three weeks now instead of two, but I do not know why yet.
